Easy Oatmeal Raisin Cookies Recipe

This recipe is for easy Oatmeal Raisin cookies that are perfect as a small breakfast-on-the-go or quick mid-morning pick-me-up with a lovely cup of tea or coffee.

Either way (or both!), they're soft and chewy, and hold up well in an airtight container for up to 1 month.




Follow this easy Oatmeal Raisin cookie recipe

Makes: 6 cookies

Ingredients:

  • 65g All purpose flour
  • 1g Baking soda
  • 1g Ground cinnamon
  • 1g Salt
  • 85g Butter, soft - soften in microwave
  • 100g Light brown sugar
  • 35g Granulated sugar
  • 70g Eggs - crack eggs into bow
  • 2,5g Vanilla extract
  • 100g Rolled oats
  • 42,5g Raisins, plumped



Method: The times allotted in brackets are a guide for how long you should be spending on each step.

  1. Turn on the oven and preheat to 191 degrees celsius. [2 min]
  2. Line a baking sheet pan with parchment paper. [5 min]
  3. Measure out the ingredients. [10 min]
  4. Sift together the flour, baking soda, cinnamon and salt. [5 min]
  5. Cream butter and sugar on medium speed then scrape down. The mixture must be light and smooth. [10 min]
  6. In a separate bowl blend the eggs and vanilla. Once done, add it to the butter-sugar mixture in 3 additions until fully incorporated. [10 min]
  7. On low speed, add the flour mix plus the oats and raisins, and mix until just incorporated. [5 min]
  8. Divide this dough into x6 60g pieces. You can do it straight out of the mixing bowl. [5 min]
  9. Roll each into a ball, place onto the baking sheet and then flatten into thick discs. [5 min]
  10. Place into the oven and bake until light golden brown, about 12 minutes. [13 min]
  11. Once done, transfer to a wire rack to cool completely. [5 min]

Chef's Notes:

  • The cookies will be soft in the middle and the sides firm to the touch.
  • Store in an airtight container lined with parchment paper.
  • You can also roll the entire dough into a log, wrap snugly in parchment or cling film and chill in the fridge until it's firm enough to slice into discs.

Variations on this recipe:

You can swop out the raisins for this mixed fruit combination:
  • 57.5g Chopped dried pears
  • 57.5g Dried Apricots
  • 57.5g Dried Blueberries
  • 57.5g Chopped Dried Strawberries
  • 57.5g Dried Cranberries
  • 57.5g Toasted Sliced Almonds
Add all these to the oats mixture.
